If you have water in the oil it is 95% certain that it is leaking from the liners. A head gasket would give oil and pressure in the radiator. It is very unlikely to be a water leak from a port to the oil gallery. Also a liner can get pinholes anywhere in its lenght so letting water into the sump.

The head is not likely to warp however much you mistreat it. The problem that requires the gasket surface to be refaced is grooves worn where the liners fit onto the head surface.

It might be an idea to drop the sump and pressureise the radiator to see if the water is leaking around a liner rather than remove the head again if you have just replaced it.

Think you will find that the hunting will go away as you use it more. If you have any hard work you will find it would improve the way she runs.

My Super came out of an orchard where it had stood for 15 years. I have done nothing to her yet other than got her running to see if she was worth doing. The engine ran awful and smoked like a steam train under load. A couple of days on a plough and rotovator blew all the cobwebs away and she pulls perfectly. Still a long way to go on tinwork though.
