I understood they are ripe when the vine at the pumpkin goes brown,I left them on the ground through a few frosts.Don't know if that is necessary. Lots of people say to cut them with a little stork attached but the Gardener on radio says it doesn"t matter. He also said to store them on their side which allows the water to run off, otherwise flat the water accumulates on top and will rot the pumpkin. Last year I stored flat and they rotted,which proved him right, this year, on side, I will see.
