If it snapped when tightening at 80 ft lbs, it must be very rusty, or you did not clean the threads first, meaning your torque readings are not correct. Those things usually break when you have the head off and are trying to remove the studs. If it broke inside the head there should be enough left above the block to be able to remove and replace. You probably need all of them. On those gaskets you don't need high tack, I have overhauled a C, SA, SH, and 460 -- copper coat works fine, they don't leak.
