I would set it "by the book" first to get a starting point -- it may well be ok if you set it this way first. With the engine at operating temperature and wide open throttle, turn the main jet adjusting screw in until the rpm begins to drop, turn it out until smooth and add about a quarter turn. You should also adjust the idle at the same time. First set the idle speed (speed not mixture) with the throttle closed, just fast enough so that the engine runs smooth. Then adjust the idle mixture the same way you did the main jet. The only difference is that when you turn the idle in you are richening the mixture, turning the main screw in leans the mixture. But, the idle is adjusted the same way -- you find the spot where it runs smooth. You may have to do the idle and the main jet a couple of times each. RPM should pick up smoothly without stumbling as you move the throttle rapidly from the closed to the open position. Then you can richen the mixture a quarter turn at a time if it stumbles under load. But, with a new, properly adjusted carb, you should not need to adjust it very much at all. If you still have a problem, it is probably not carb related.
