180 degree too hot?

Howdy guys,
I'm having zero luck finding a 160 degree thermostat for a to35. Will a 180 be too hot?
I'm not 100% sure if my temp guage is working till I try a new 'stat. It still had the old accordian-style in housing and it was shot.
Is the heat transferred via a metal conductor to guage or is there a fluid that goes up to guage?
Just preparing for possible guage replacement.
If I replace, do I go with a guage with actual temps listed or stay with the "normal" zone type face? Thanks, Mark

You can get either of those thermostats from this site, the page number is as follows:-

There is a fluid in the tube (in the bulb on the end actually) that expands with the heat and operates the needle on the gauge.
Fit whatever gauge you prefer, as long as it shows the correct temperature.
