Son dug some new spuds tonight after working on the rafters for the tractor shed.Hotter then blue blazes in the sun. My job was to be OTIS elevator using the bob cat. Now tomorrow comes the new tin roof. Gonna have to tarp the sides until our ship comes in.Had a lot of wear in the carb when the tractor was exposed to the elements, hot/cold. Needed the shed. 12x24x12, so the tractor and cab will make it into the shed.706 with cab requires a lot of height.
Now the spuds are just huge and firm. Burbank russet is a great tasting firm potato. In all my years as traveling these are the best spuds I have ever ate. Our thanks to our grower friend for all the information he supplied. In S Sioux Iowa the club owner served Potatos cooked in vats of resin rolled in crystal salt, cut long ways, looked like rubies covered with diamonds.
The place was called the Flamingo.Any way , Gonna be eating spuds until the ark Angel toots his horn for me.lol.Wonder if the Flamingo is still there. LOU.

Lou,

Do you have Cracker Barrel restaurants near you? I haven't seen potatoes prepared like you described for years, but Cracker Barrel used to serve whole potatoes prepared just like you stated. Cooked in some kind of resin (smelled like pine tar), then coated with salt crystals. I loved them. Used to order one nearly every time I went to a Cracker Barrel, but they discontinued them a long time ago.

Don't have any idea where to get something like that in Middle Tennessee.

Thanks for the pics and the information.

For a short time I lived basiclly across the street from the Flamingo, maybe 15 years ago. I don't go through that street much anymore so I don't know if it is there or not. Now I will have to check.

Went to the greengrocer recently to get some spuds. I wanted to make chips. As you would know some are suitable, others not and they vary with the starch content.
So I asked. "What kind of potatoes are these?"

The lovely little thing replied "WASHED".

Grrrr.

I remember those at Cracker Barrel. The skins tasted better than the inside. Had em somewhere else but not sure where. Might have been the Red Lobster, Out Back or some place like that.

Yep seed poatoes are available . we asked our friend (potato grower) so we drove to the seed company where they use to buy in guanity. We bought 25 lbs and while talking to our friend, he asked "are you going to plant an acre of em?", as only one small piece per hill is all we need.So now we are going to be swimming in spuds if the food pantry doesn't take our over flow. That spuds is what Lays potato chips are made from. These spuds are so solid with a smooth skin and mild tasteing .I'm doing my best to eat em
and going to store 150 lbs.Not going to grow so many next year.lol. LOU

TOM. No cracker barrel around here. The Flamingo was a stones throw from South Sioux city Iowa .I played the Flamingo many years back. He had a unique establishment and great food.My Trio went in behind Ike Cole(Nats brother).Ike sounds just like Nat. Great piano player as well.I Have some Photos of the club and marque(sp). Will try and dig em out and see if Victor can put em up on screen .And your right ,those spuds sure was worth the trip . LOU.

Telling stories again.Lays does not cook a russet chip.Russets produce a burnt looking chip. Some companies do cook a Russet chip and mark the bag Russets.Better buy a bag of Russet chips so you will know what they look like.

There are 16 varietys of chip potatoes. You wont find them in grocery stores.kennebec, snowden, norwis and atlantic are a few I can remember.Russets can be used if you dont mind the burnt look of the chips.Russets can be found in grocery stores. The are 16 varietys of Russets grown.

Those potatoes in the pix are not russet burbanks. The shape is wrong and they are too clean. You can scrub a russet burbank with a brush and it still looks dirty. Many crosses have been made with the original burbank.I grew a 50 foot row of russet burbanks last year.Used true certified seed from a reliable supplier. They tend to run oval but never long and thin.
