Rear F30 Cut-offs;What size Rim?

I have what's left of cut-offs; just the center and very short bars on rusted out 28" rims. I'm thinking of buying new steel bars and welding them to a tall enough rim that will clear the brake housings. I can then reverse them on the F30N making it narrow enough to fit a 6'4" wide trailer. What size rims and tires would be suitable and not overly increase the height of the rear end?
